What Is Calcium Propionate?
Calcium propionate is the calcium salt of propionic acid and is the most commonly used propionate preservative in bread and baked goods. It extends shelf life by inhibiting mold and bacterial growth (including rope-forming Bacillus). Some studies have suggested that calcium propionate may affect behavior in children; however, EFSA's 2014 assessment found the existing evidence insufficient to establish a causal link, and the ADI remains not specified (acceptable). It is approved in the EU, USA, Japan, Canada, and Australia.
