What Is Potassium Propionate?
Potassium propionate is the potassium salt of propionic acid, used as a preservative in bakery products, processed cheeses, and some beverages. It provides the same antifungal and antibacterial activity as sodium and calcium propionates while offering a sodium-free alternative. JECFA considers propionates acceptable with no numerical ADI. EFSA confirmed safety in its 2014 propionate group review. Approved in the EU under Regulation EC 1333/2008 and in many other national food regulatory frameworks.
