What Is Benzoyl peroxide?
Benzoyl peroxide is an oxidizing agent used as a flour bleaching agent in several countries. It rapidly bleaches the yellow carotenoid pigments in flour, producing whiter flour preferred for specific baking applications. In the EU, flour bleaching agents are not authorized — EU flour may only be treated with ascorbic acid (E300) and L-cysteine (E920). Benzoyl peroxide is authorized in the USA (21 CFR 137.105) and Canada for flour bleaching, with maximum use levels specified. JECFA has reviewed benzoyl peroxide as a flour treatment agent.
