Sorbitan monopalmitate (Span 40) is a sorbitan ester produced from sorbitol and palmitic acid, used as an emulsifier in food applications including bakery products and edible coatings. It has intermediate HLB properties between sorbitan monolaurate and monostearate. Part of the sorbitan ester group with a JECFA ADI of 0–25 mg/kg body weight. EFSA reviewed sorbitan esters in 2015.
